Under the name Holorganique, we – Thomas Hollaus & Eva Schevers – run, with passion, a restaurant that combines tradition with innovation. Our cuisine tells stories: of regional foods, traditional craftsmanship, and the art of fermentation. Honest foods from the region, handcrafted and full of flavor. Our culinary approach is based on transparency, quality, and deep appreciation for nature. We place a special focus on fermented foods – living products that support our health while building a bridge between farming tradition and modern food culture.

With heart & family

We are Thomas Hollaus, a trained chef from the Pinzgau, and Eva Schevers, a Dutch native with roots in Schalkwijk. Together with our blended family, we live in Walchen. What unites us is the vision of taking people on a new, sustainable journey of enjoyment. After years of professional growth and family time, we found a place at Fort Kniepass where we can bring our ideas to life – with attention to detail, deep awareness, and genuine enthusiasm.
